Incorporation of legume protein in liquid breakfast for a healthy Australia. This project aims to understand and control the properties and interactions of legume protein with other ingredients (e.g. whey protein and dietary fibre) to formulate healthy liquid foods with superior techno-functionality. This research should significantly broaden our understanding of the behaviour of legume protein-phospholipid complexes and their contribution to malodorous flavour development. The expected outcomes ....Incorporation of legume protein in liquid breakfast for a healthy Australia. The expected outcomes are protocols to prevent undesirable sensory characteristics in liquid foods. This should benefit the food industry by improving the sensory attributes of beverages enriched with legume protein, leading to the creation of novel, highly nutritious products with superior sensory attributes and long shelf-life.Read moreRead less

This project aims to provide new, science-based levers for optimising the industrial production of tailormade yeast extracts for food applications. Advanced biochemical and engineering methods will be used to develop new knowledge of the links between yeast growth conditions, cell biochemistry, processing and the flavour and texture profiles of yeast hydrolysates. This understanding will allow the properties of yeast hydrolysates to be accurately tuned during yeast production and processing. The resulting process improvements and innovations will increase the efficiency and quality of current yeast extract products and allow the development of new food products.Read moreRead less
Real-time phylogenetics for food-borne outbreak surveillance. The project aims to introduce, for the first time, real-time evolutionary analysis of agricultural pathogens so that outbreaks affecting crops and the food supply can be managed precisely and rapidly. An expert team will implement a large-scale data analytics framework in user-friendly software that integrates Australian infectious disease genomics data with global data. Underpinning this work are new theory and algorithms that apply ....Real-time phylogenetics for food-borne outbreak surveillance. An expert team will implement a large-scale data analytics framework in user-friendly software that integrates Australian infectious disease genomics data with global data. Underpinning this work are new theory and algorithms that apply Sequential Monte Carlo to update phylogenetic analyses continuously as new data arrives. Expected outcomes include new knowledge of statistical algorithms for evolutionary analysis, relevant to biological disciplines beyond infectious disease; and enhanced capacity for infectious disease analysis. Powdered dairy products extend shelf life and ease of transport, with >20% annual growth in premium products, such as milk protein concentrates and infant formula powders. This project aims to support the development of value-added dairy powders by investigating the impact of a novel high pressure processing technology in enhancing the properties of dairy powders and/or introducing new functionality. Successful outcomes will help expand the offering of high value dairy ingredients and thus increase the global competitiveness of Australian dairy manufacturing.Read moreRead less
Response of Vertical Drains in Soft Subgrade under Cyclic Rail Loading. Soft formations (subgrade) can become unstable when subjected to heavy and repeated (cyclic) train loading. This project aims to investigate the cause and mechanisms of undrained instability of soft subgrade soil beneath rail embankments, and to assess the effectiveness of prefabricated vertical drains (PVDs) in stabilising such soils. The role of PVDs to enhance track performance will be quantified via rigorous mathematical ....Response of Vertical Drains in Soft Subgrade under Cyclic Rail Loading. This project aims to investigate the cause and mechanisms of undrained instability of soft subgrade soil beneath rail embankments, and to assess the effectiveness of prefabricated vertical drains (PVDs) in stabilising such soils. The role of PVDs to enhance track performance will be quantified via rigorous mathematical techniques complementing a computer-based numerical model, which can be validated by laboratory and field data. It will deliver tangible outcomes for accurately predicting the long-term settlements in soft foundations over prolonged train loading while extending the life span of modern railroad infrastructure.Read moreRead less
Next-generation ocean current forecasting to improve maritime safety . This project aims to measure upper ocean currents at scales of 10-100 km in Australia's marine estate using pioneering satellite radar technology. The Surface Water and Ocean Topography (SWOT) mission will map currents at 10 times the resolution of present-day satellites and revolutionise our understanding of ocean dynamics. Expected outcomes include validation of SWOT data in Australian waters and merging this data into Bure ....Next-generation ocean current forecasting to improve maritime safety . Expected outcomes include validation of SWOT data in Australian waters and merging this data into Bureau of Meteorology ocean models. Downstream benefits include improved ocean forecasts for maritime safety, search-and-rescue, spill modelling, and marine conservation. At the same time, the project will build sovereign capability in emerging remote sensing technology with a legacy beyond the life of the SWOT mission.Read moreRead less
