The role of fat crystal wettability in altering dairy emulsion properties. This project aims to control fat crystal wettability, to create tailored dairy products with desirable stability, shelf-life and texture. Fat crystals are an essential component of dairy emulsions (fat droplets dispersed in dairy/milk serum) and control product processing, shelf life and texture. Their structuring role involves partial coalescence: the formation of complicated network structures of fat droplets. Unless fat crystals are partially wetted by water, they will not be present at the fat droplet interface, and partial coalescence will not occur. Expected outcomes are new dairy products with optimum stability and texture.Read moreRead less
New-generation low-fouling coatings for membrane and metal surfaces for dairy processes. This project will create new coatings that provide high levels of resistance to membrane and metal surfaces fouling in the dairy industry. The project will enable the implementation of a family of readily applicable low-fouling membrane coatings that will significantly reduce operational costs.
New Optimisation and Control Technologies for Milk Powder Manufacturing Processes. Advanced optimisation and control are considered to be one of the top technologies that help milk powder producers operate their plants more efficiently. However, the successful implementations of these technologies are limited due to poor understanding of the relationship between raw material variations and process disturbances with the target variables. Moreover, uncertainties in process measurements also preven ....New Optimisation and Control Technologies for Milk Powder Manufacturing Processes. Advanced optimisation and control are considered to be one of the top technologies that help milk powder producers operate their plants more efficiently. However, the successful implementations of these technologies are limited due to poor understanding of the relationship between raw material variations and process disturbances with the target variables. Moreover, uncertainties in process measurements also prevent reliable control and effective optimisation. This project aims to address these gaps by developing new optimisation and control methods based on effective model reduction and uncertainty process variable identification, to enable Australian milk powder manufacturers to continuously improve productivity and reduce cost.Read moreRead less

The innovative newly proposed materials can trap and efficiently decompose dissolved organics in the same process, without generating any waste for disposal. No UV is required and the solar radiation can be efficiently used. The proposed research will be a significant breakthrough in the field of water treatment that reduces energy consumption, uses low cost materials and provides a real solution. The research findings will be useful to a wide spectrum of manufacturing industries which are currently generating slightly contaminated wastewater, and will be beneficial to the community in general. At the same time, the industries will be a step forward toward sustainable manufacturing.Read moreRead less
Development and application of an index for substantiating health benefits of omega-3 enriched foods. A cost-effective means of substantiating health claims for omega-3 (w3) rich functional foods is needed to fully exploit growing consumer demand for these products. In a two-stage approach, cardiovascular and anti-inflammatory benefits of w3 will be assessed in human dietary trials; improvements of health status in response to graded doses of w3 supplements will be correlated with docosahexaenoi ....Development and application of an index for substantiating health benefits of omega-3 enriched foods. A cost-effective means of substantiating health claims for omega-3 (w3) rich functional foods is needed to fully exploit growing consumer demand for these products. In a two-stage approach, cardiovascular and anti-inflammatory benefits of w3 will be assessed in human dietary trials; improvements of health status in response to graded doses of w3 supplements will be correlated with docosahexaenoic acid (DHA) levels in erythrocytes (DHA Index). Simple bioavailability trials can then be used to determine the intakes of foods required to attain the DHA Index, thus confirming their potential to deliver specified health benefits. Initial trials will support health claims for w3 rich fresh pork and processed pork products.Read moreRead less

The project aims to develop advanced new material for multilayered packaging with high oxygen and moisture barrier properties for cost effective packaging applications. Poly Products currently imports and uses some polymer as its key component for controlling barrier property of their food packaging. However, the new nanostructured material when sandwiched between less expensive materials in a multilayered packaging film will yield excellent barrier properties, leading to extended shelf life of different food products. The new smart material will generate significant material saving and replace the imported polymer, and will secure export market of the product in Asia -Pacific region.Read moreRead less

Plant wall polysaccharides are extensively used for food and fibre, and are important dietary components in human nutrition. A precise knowledge of mechanisms used by plants to synthesize these polysaccharides is unavailable, but would reveal potential routes to manipulate their biosynthesis in important crop species. For example, the levels or structures of polysaccharides might be modified to improve their efficacy as anti-cancer agents in human diets, to enhance digestibility of animal stock feeds, or to synthesise pharmologically valuable compounds. Thus, economic, social and environmental benefits will flow to both producers and consumers. Read moreRead less

The multibillion-dollar wine industry forms a significant part of the Australian economy especially in regional areas. The application of high power ultrasound (HPU) to the cleaning and disinfection of wine barrels as well as for the enhancement of wine through improved fermentation and extraction of flavours and colours from grapes will have significant benefits to this industry. It is essential that Australia also capitalise on the benefits that this technology can provide in improved processing and products, lower costs, reduction in environmental pollution, water re-use and replacement of "dirty" energy. In this way the impact on this industry will help cement Australia's position in the world wine market long into the future.Read moreRead less

The research and development will see these flavour compounds added back to olive oil to enhance the flavours of bland oils and to increase the shelf life of olive oil. The same compounds also have uses as enhancing the flavours of foods in general and provide a source of naturally occurring antioxidants. The compounds will be tested as natural antibiotics as a means of controlling fungal infections in vineyards and in vegetable production. Read moreRead less

By developing a socio-culturally aware public education and social marketing programme to reduce food waste behaviours, the proposal addresses the national research priority area of an environmentally sustainable Australia. Reducing food waste by just 10% would save ~$530 million worth of wasted expenditure on food and reduce food waste in landfill by ~300,000 tonnes per annum, thereby reducing the costs associated with disposal and the release of harmful methane gases. The methodology refined by this project to understand food waste will provide the basis for efficient and sustainable food waste reduction strategies and provide an approach that can be generalised to other waste streams with strong socio-cultural determinants.Read moreRead less
